Here's a super versatile spelling activity for students. They are to fill in the missing blanks with vowels. There is more than one correct answer. You could choose to provide a visual if necessary. Perhaps, an A, E, I, O and U on a little card might help. They can move it in and out of the space and see if the word makes sense. The student can either write in the answer, use letter cut outs or the teacher could verbally go through the activity.
