The digital cameras do not produce color; they simply count light input values. These input values, recorded spectral power distributions, are mapped to RGB tristimulus values using CIE colorimetry.
Colors of RGB illumination are additively combined, whereas we see things by the subtractive process of absorption and reflection of light, or in the case of the sky, the process of refraction.
The difference is most notable in the deeper hues, such as violet, cobalt blue, indigo, and sunny green.
For the images with both very bright and very dark areas, you may use CLAHE profiles, it means Contrast Limited Adaptive Histogram Equalization.
The high-end retouchers and advanced amateurs may adjust Fashion, Portraits, Product, Food, Jewelry, Scenery, Birds, Flowers, Astro, Underwater and many more images without artefacts.
